4.5 cl Old Tom Gin
1.5 cl Sugar syrup
3 cl Fresh lemon juice
6 cl Soda water
Stir
Highball
Lemon slice & Maraschino cherry
Pour all ingredients directly into highball glass filled with ice. Stir gently. Garnish with lemon slice and maraschino cherry. Add a dash of Angostura bitters.
The British history suggests that Tom Collins was created in London by Barman John Collins around the middle of XIX century. If made with Old Tom Gin, presumably becomes the Tom Collins. The first published recipe appeared in the manual of Jerry Thomas in 1876.
